Kale

Okay so I know that I already blogged tonight but I just have one more thing to share. So one of my husband's favorite foods is kale. Kale is a nutritional powerhouse and rich in calcium and other vitamins. Seriously one cup has 1327% of your needed vitamin K for the day. It has almost 200% of your Vitamin A. I could go on and on.

We have eaten kale numerous ways; in salads, smoothies, mixed in scrabbled eggs, etc. We were feeling a little creative tonight. As I was looking on allrecipes.com I found a recipe for Baked Kale Chips. http://allrecipes.com/Recipe/Baked-Kale-Chips/Detail.aspx?prop31=1 You probably think it sounds gross. When I read it I was very hesitant. But we tried it any way and they were AWESOME!!! I am not kidding they tasted like potato chips!

Graduation

I cannot believe it, my niece Heather graduated from NKCHS last night. We are all so proud of her and all that she has accomplished. She has been accepted to almost every school that you could imagine. She has also received TONS of scholarships. Way to go Heather!!!!

Fishin' with Daddy

Steve has dreamed of the day when he could take Mason fishing for years. They have even practiced (inside) with Mason's pole for at least a year.

Mason loved watching Daddy cast the fishing pole.

This was their first catch.

Mason enjoyed looking and touching the fish while Daddy held it.

Steve tried to teach Mason how to hold the fish.

Mason liked casting, reeling it in, looking at it on the hook and watching it be taken off the hook. However, I am not so sure that he liked holding the fish. When Steve put the fish back in the water Mason laughed. He loves fishing with his Daddy.

Joining a CSA

After lots of consideration, we decided to join Moon on the Meadow Farm, a CSA based out of Lawrence KS. Here's a picture of our farmer from the Lawrence Farmer's Market web site:
We look forward to organic, high quality, locally grown food, and supporting a strong local business. The cost of annual membership is comparable to what we would spend on vegetables at the grocery anyway. We are excited for our first shipment this Thursday, to see what comes, to figure out what to do with it, to teach Mason the value of locally grown food, and to push ourselves to cook healthier foods. :)

Circus

Today we were in for a treat- we went to the circus! It's a traveling circus that was visiting Sake Wotawana (as Mason calls it). When we approached the "big top", we couldn't help but laugh.



Much to our surprise, the show was very entertaining! There were tigers and lions in a very sturdy cage. :)


I think that Mason's favorite part was the food. :) He loved the sno cones

and the cotton candy
He also had popcorn. :)

The circus must have been run by a small family. The MC was a trapeze artist and a star on her unicycle. The girl running the pony rides had many roles as well. We had a blast!!! There are a lot more photos on facebook.

Mason Mommy Day

Yesterday Mason went to the doctor to find out that he has an ear infection. Steve stayed home with him yesterday so today was my turn. Although I wish Mason were not sick, we truly enjoyed our day together. One of my favorite parts of the day was nap time. Mason and I actually napped together. I always try to get him to sleep with me but he just talks the whole time and never falls asleep. I guess because he was so tired he actually fall asleep on me. We have not slept like that since he was a newborn. I LOVED every single second of our nap!

Is there a better way to start off Mother's Day weekend?

Finally Blogging Again







Last week we enjoyed dinner with our lake friends. Mason found the desserts right away and was taking the basket (of desserts) all over the place. I wish I would have gotten a picture of it. He LOVES sweet stuff and can never get enough. You should see this kids concentration when he eats desserts.
